SALMON POKE
Green Onion Ginger Sauce • 1 teaspoon Ajinomoto
• pinch Hawaiian salt
• 2-3 thumbs ginger root, grated
• 1 stalk green onion
• canola oil, enough to cover mixture
Cut green onion finely. Do not chop. (Use only the white part of stem of green onion). Use Gourmet Microplane to grate ginger root. Add Hawaiian salt and Ajinomoto to the green onion and mix well. Add the grated ginger root to the mix. Add enough canola oil to cover the mixture.
Salmon Poke
• 1 pound salmon, cubed
• 1/2 cup green onion ginger sauce (described above)
Add cubed salmon and green onion ginger sauce to mixing bowl. Mix well and refrigerate until ready to eat. Serve ice cold.
